Favorite Recipes with Meat veganized?

I need some ideas for transforming dishes with meat into vegan/vegetarian culinary Masterpieces. For example, instead of beef flautas make black bean flautas.....any IDEAS?

    Good stuff! Also is good if you brown it a bit in a skillet and then mix it into some warm refried beans.
